Kothimbir (Coriander) Vadi : Maharashtrian snacks

Coriander commonly called as Kothimbir in western part of India can be added to any preparation to add flavor, Kothimbir badi is famous and delicious snacks in Maharashtra and one can love to have it. The time required to prepare the dish is about 30 minutes.

Ingredients for preparing Kothimbir Vadi

The quantity for Kothimbir vadi mentioned below is for two servings, if required more one can add all ingredients in equal proportion. The ingredients are

100 gm coriander leaves, chopped in small pieces
5 gm gram flour (Besan)
½ tbsp rice flour
2 green chillies, chopped finely
½ tsp ginger garlic paste
1 tsp lemon juice
½ tsp sesame seeds
Pinch of turmeric
Pinch of baking soda
Pinch of asafetida
½ tsp garam masala powder
Salt and sugar to taste
Oil to fry preferably sun flower oil

Method to prepare Kothimbir Vadi

Baring oil, all ingredients are mixed in a bowl and enough water is added to make a thick batter, the mixture should be stirred constantly to remove thick lumps of the mixture. Now grease the flat container with oil and pour batter in vessel. Steam for about 20 minutes till the skewer can be inserted cleanly.

Now cool the preparation and un mould, cut into small pieces. In a skillet of frying pan heat oil and fry the cut slices till it become golden and crispy.

Kothimbir vadi is now prepared, serve them with mustard sauce or chilly sauce.
